Stuffed Baked Sweet Potatoes | An Easy Weeknight Dinner

I’m always on the hunt for an easy dinner that can be thrown together with minimal effort.  It’s not just about how long the recipe takes, but also how many dishes I have to dirty, ’cause let’s face it, the clean-up is the worst part of any cooking!

In addition to easy and minimal, I want recipes that are full of nutrients, super filling (because I’m usually famished by dinner time), and simple enough to double for left-over lunches.

One night when I came home with no plan, I looked in the empty fridge and pantry, and came up with this stuffed baked sweet potato that instantly became a favorite.  No strange or expensive ingredients, and you likely have everything to throw this together tonight!

Bake the Sweet Potatoes

Pretty self explanatory here…..350 until they’re done!

Warm Chicken

Add the chicken and all spices to a sauce pan and heat.

Assemble!

Cut open the potato and add ingredients to your hearts content!

Ingredients
  • 4 Sweet Potatoes White sweet potatoes are excellent with this dish!
  • 2 Cans Chicken Breast
  • 4 Cups Spinach
  • 2 Tbsp Paprika
  • 1.5 Tbsp Cumin
  • 1 Tbsp Cinnamon
  • 4 Tbsp Ghee

Instructions
  1. Bake Sweet Potatoes at 350 degrees for 45 minutes
  2. While Potatoes are baking, add chicken and all spices to a saucepan, and warm. Let simmer until potatoes are done.
  3. Slice open a potato; add 1Tbsp Ghee, 1Cup Spinach, and desired amount of chicken.
  4. Enjoy!
